This course provides a detailed overview of hotel food production operations, focusing on the critical role the food production department plays in delivering high-quality meals and contributing to the hotel’s overall success. Participants will learn the end-to-end processes involved in managing food production tasks, from preparation and cooking to presentation and plating. The course emphasizes the importance of excellent culinary skills, eective kitchen organization, and the use of technology in streamlining operations.
Key topics include cooking techniques, kitchen organization, food safety and hygiene, and menu planning. Participants will also gain practical experience with kitchen equipment and learn how to handle special dietary requirements and manage inventory.
By the end of the course, participants will have the skills and knowledge required to manage food production operations effectively, ensuring a high level of guest satisfaction and operational efficiency.

Iris Odzor
A Ghanaian by birth, she completed the University of Portsmouth in the United Kingdom with a Bachelor of Arts Degree in Hospitality Management with Tourism. She also holds a BTEC National Diploma from the International Hotel School, Isle of Man, British Isles, and has twelve certifications from the American Hotel & Motel Association.
Iris demonstrates performance excellence in hospitality, specializing in Training, Hotel Openings, Branding and Operations Management within the Boutique and Luxury-lifestyle sectors. Her extensive leadership skills acquired from on the ground management include launching multiple, highly sought after hotels and luxury residences across Ghana, and she has opened 2 hotels within the last few years.
She is a trusted Advisor, a visionary and a seasoned hotelier with a proven track record of success. She has 5-star International experience with the Hotel Intercontinental London, Hyde Park Corner, UK and is a Member of the Institute of Hospitality, England - MIH and has had the opportunity to work with various Hotels & Restaurants both in the United Kingdom & Ghana.
She has worked with various hotel chains in England including the Hilton Hotel Basingstoke, the Forte Crest Hotel - Glasgow Airport, the Stakis Hotel - Norwich, The Club Quarters Hotel - St Paul’s to mention a few.
Back in Ghana, She was the Group Human Resources and Capacity Building Manager at the Oak Plaza Group of hotels in Accra. By age 25, she was the Hotel General Manager of the 3-Star Ramada Resort in Accra and was featured in the Ghanaian Spectator newspaper as the youngest Hotel Manager in Ghana.
She has created an extensive network of industry professionals who she works with on a regular basis. Throughout her career, Iris has supported the success of entrepreneurs through executive coaching and training. For the past 20 years, she has taught all aspects of the hotel business and have trained over 3,000 hoteliers in various hotels across Ghana.
Her tried and true system is based off over 20 years experience in the hospitality industry. She prides herself on setting up her clients for success in Hospitality Training & Human Resource Development and is sure that they will always leave her sessions more prepared, properly informed and trained to do their jobs safely, correctly and productively.
